The curing process takes place in the only natural wooden drying room built in the last 50 years. This exceptional environment acts as a natural regulator of humidity and temperature, allowing the pure mountain air of the Sierra de Huelva to circulate freely, giving the ham a slow, aromatic maturation impossible to reproduce industrially.
